COURSE INTRO

Preparing tea is an exercise in simplicity that consists of nothing but boiling water, making the tea, and serving. Preparing any of the hundreds of teas available requires attention and knowledge. Making a delicious cup of tea is a play of tea leaves, the amount of water used, water temperature, the time of infusion, and the vessel the tea is brewed in. Following the correct directions for a tea can make even tea satisfying, while brewing a rare, expensive tea incorrectly can lead to a bitter, undrinkable infusion.
SPEAKER

Ms. May CHAN Siu-Mei was born in Hong Kong.  She is  a professional tea master, the principle instructor of Homeland Tea Garden and promote east and west tea culture education and activities.  She graduated from the School of Chinese Medicine, Hong Kong Baptist University majoring in Tea Therapy & Nutritional Study for Health Preservation.  She has also registered in the Occupational Qualification Certificate, China National Tea-Taster (Technician/Second Level) and China National Tea-Artist (Technician/Second Level), the People’s Republic of China.  May has paid several visits to the planting and production of six major tea types (i.e. green tea, white tea, yellow tea, oolong tea, black tea and dark tea) in China as well as overseas countries. In 2016, she was appointed as the Officer of Shenzhen Tea Industry Association Liaison Office in Hong Kong to perform the tea culture and education tasks over the world. May was appointed by Hong Kong Tourism Board to encourage Chinese  tea culture.  May has also been invited from university, business or non-profit organization to give tea talks/tea class conduct by Cantonese, Mandarin and English and its application on health preservation and improvement of physical conditions.

3. Usage of teaware (i.e. Gaiwan &/or Teapot)
4. Tea appreciated & tasting
5. Practice of tea brewing
